Beef bourguignon

  • 750g stewing steak

  • 4 rashers of streaky smoked bacon, chopped

  • 4 tbsp vegetable oil

  • 12 shallots, peeled

  • 1 carrot, chopped

  • 225g mushrooms, quartered

  • 400ml boiling water

  • 1 beef stock cube

  • 300ml red wine

  • garlic (2x cloves), chopped

  • 1 tbsp tomato paste

  • 2 bay leaves

  • salt (to taste)

  • black pepper (to taste)

  • 1 tbsp cornflour (optional)

  1. Preheat the heating base to LOW

  2. In a large frying pan, add the streaky bacon and cook until slightly cripsy

  3. Then place in the slow cooker

  4. Toss the beef in the flour

  5. Heat oil in the frying pan and cook the beef in small batches to colour slightly

  6. Add to the bacon in the slow cooker

  7. Lightly colour the baby onions or shallots and carrots in the frying pan and then add to the slow cooker, along with the mushrooms

  8. Mix together the boiling water, stock cube, red wine, tomato paste, garlic, thyme and bay leaves and pour over the meat

  9. Cover with the lid and cook on LOW for 5-6 hours

  10. Season well and place the lid and thicken slightly if needed - mix cornflour with a little water to make a paste and then add to the dish and stir through

  11. Heat on high for a few minutes to thicken

  12. Serve with mashed potato and green beans or braised cabbage
