Tips

How do you make a healthy chicken and chorizo stew?

Making this chicken and chorizo stew even healthier is as easy as pie, loves! Simply follow these steps:

  • Choose a lean chorizo: Opt for a low-fat chorizo if you can find one, to cut down on the fat content.
  • Add more veggies: Incorporate more veggies like carrots, peas, and spinach to give it a nutritious twist. More the merrier, I always say!
  • Reduce the wine and cream: You can always skip the red wine and soured cream or substitute with low-fat yogurt to keep things a tad lighter.
  • Opt for whole grain bread: Serve with whole grain crusty bread instead of white, to add some extra fibre to your meal.

How do you store chicken and chorizo stew?

Storing this delightful chicken and chorizo stew is a breeze!

  • Cooling down: Allow the stew to cool to room temperature.
  • Choose the right container: Place it in an airtight container or a resealable freezer bag.
  • Label it: Always pop a label with the date on it, so you don't forget when you tucked it away.
  • Refrigerate or freeze: You can refrigerate if using within a few days or freeze for longer storage.

How long can you store chicken and chorizo stew?

  • In the fridge: The chicken and chorizo stew will happily stay in the fridge for about 3 to 4 days. Perfect for a quick midweek reheat!
  • In the freezer: If you've popped it into the freezer, it will keep for up to 3 months. Remember to thaw it overnight in the fridge before reheating.

How do you reheat chicken and chorizo stew?

Reheating chicken and chorizo stew is as simple as a nursery rhyme!

  • Thawing: If frozen, allow the stew to thaw overnight in the fridge.
  • Stovetop: Pour the stew into a saucepan and heat over medium heat, stirring occasionally, until it's piping hot throughout. This usually takes about 10-15 minutes.
  • Microwave: If you're in a rush, you can reheat in a microwave-safe dish on a medium setting for 2-3 minute intervals, stirring between each until hot.

Just remember, only reheat what you'll be using and don't reheat more than once.

Serving ideas for chicken and chorizo stew

Presentation is everything, and we want our lovingly prepared meals to look their best, don't we?

  • Bowl or bread bowl: Serve the stew in a beautiful, rustic bowl, or if you're feeling adventurous, a hollowed-out crusty bread roll.
  • Garnishing: A sprinkle of chopped parsley, chives, or even a dollop of guacamole on top can add a bit of pizzazz.
  • Accompaniments: Try serving the stew with a fresh side salad or grilled vegetables for a balanced meal.

Cooking chicken and chorizo stew with children

Chicken and chorizo stew isn't just a meal; it's a celebration of flavours and family togetherness. From preparing it with your little helpers to enjoying it with friends and family, it's a dish that keeps on giving. So why not get the little ones involved! Here are some things they can safely help with:

  • Chopping Assistance: Let them help with chopping soft vegetables using safety knives.
  • Stirring the pot: Under supervision, of course, let them stir the pot and watch the beautiful colours mix together.
  • Taste testers: They can be your little taste testers and help with seasoning. A wonderful way to teach them about flavours!

Voila! There you have it – a comforting chicken and chorizo stew with a healthful twist and options for every member of the family. Whether it's a chilly evening or just a cosy dinner, this stew is sure to win everyone's heart.

Variations

Add a chopped yellow or red pepper, courgette or mushrooms

If using a slow cooker - add all ingredients to the slow cooker, cook for 8 hours on low.

Can you make a meat-free alternative for chicken and chorizo stew?

Here's a simple way to whip up a meat-free version of your favorite chicken and chorizo stew:

  • Replace the chicken: You can use chickpeas or butter beans as a fantastic protein-packed alternative to chicken.
  • Substitute the chorizo: There are some marvellous vegetarian chorizo substitutes available in markets. If you can't find any, smoked paprika will give you that delightful smoky flavour.
  • Add more veg: Add extra vegetables like aubergine and peppers to make the stew even heartier.

Don't bother using fresh tomatoes - imo it actually tastes better with tinned ones, and much less faff.

I make this regularly as it is a firm favourite. I use 2 tins of chopped tomatoes (one of them being chilli toms) instead of fresh and don't bother with the olives, sour cream and coriander. Delicious

I decided to make this chicken and chorizo stew in my slow cooker after seeing good reviews and positive comments. I followed the recipe exactly and was very disappointed as were my family. The dish was very bland and in my opinion, the ingredients did not work well together! I would not make this again.

I made a few tweaks for my tastes - no olives and half the chopped tomatoes - then added courgettes, peppers and some paprika. It was delicious!

The times for this dish seem to be based on cooking it on the hob. How long does it take in the slow cooker? Sorry to be thick, but i've just bought my slow cooker and haven't yet worked out how to adjust times on recipes in order to cook them in the slow cooker!

Really lovely, we left out the olives. I used the juice of a whole fresh lime and fat free creme fraiche on top(just a little) instead of sour cream. Fab!!

Wonderful tasty stew that is a little different to the norm. My family loved it and it made a change to use chicken and chorizo without it being in a paella or on a pizza

This has become a firm favorite in our household. I made it for the first time about a year ago. I used left over chicken (usually from a roast the night before), it's a great way to use up your leftovers and make two meals out of one bird!
