  • 1 onion (thinly), sliced

  • 125ml dry white wine (or stock)

  • 10 Kalamata olives (pitted), chopped

  • flat leaf parsley (or basil), chopped

  • 500g chicken (breasts or thighs), skinned

  • 1.5 tbsp capers

  • 300g plum tomatoes (fresh or tinned), chopped

  • ½ green pepper, sliced

  • sea salt (to taste)

  • pepper (to taste)

  • garlic (2 cloves), crushed

  • 300g pasta (cooked)

  • Feta (to serve - optional)

  1. Place sliced onion in slow cooker and cover with chicken

  2. In a bowl stir together tomatoes, green pepper, salt, pepper, garlic and white wine - pour over chicken

  3. Cover and cook on Low for 5-6 hours or on High for 3-4 hours, or until chicken is tender

  4. Stir in capers, olives and fresh herbs just before serving

  5. Serve over cooked pasta and crumble some feta on top (optional)
