French onion soup in your slow cooker

  • 4 tbsp olive oil

  • 6 onions (medium), sliced

  • 1 tbsp caster sugar

  • garlic (3x cloves), crushed

  • 200ml dry white wine

  • 600ml beef stock (or chicken, boiling)

  • 2 tbsp Worcester sauce

  • 4 baguettes slices

  • 100g edam (or gruyere)

  • 12 tbsp brandy (optional)

  • salt (to taste)

  • black pepper (freshly ground, to taste)

  1. Place the onions, oil, sugar, garlic into the stoneware and heat gently on the hob

  2. Once sizzling, stir well and cook for 10 minutes to soften slightly, then add the wine and warm through

  3. Place into the heating base, setting on low

  4. Pour in the boiling stock, Worcester sauce, salt and pepper and mix well

  5. Place the lid on and cook for 4-5 hours

  6. Meanwhile toast the bread on both sides, then pile on grated cheese, grill until melted and golden - this is your cheese crouton

  7. To serve stir the brandy into the soup then ladle into hot bowls and top with the cheese crouton

  8. Sprinkle with chopped parsley
