  • 1 onion, diced

  • 1 tsp dried sage (or 1 sprig of fresh sage)

  • 400g sausage meat (or 6 sausages)

  • 70g breadcrumbs

  • 250g puff pastry (either shop bought puff or homemade)

  • 1 egg (to glaze)

  • 1 tbsp milk (to glaze)

  1. Preheat oven 220'C/Gas mark 7.

  2. Saute your diced onion in a little olive oil and then add your sage and set aside to cool.

  3. Split open your sausages and pop the fillings in a bowl. Add the handful of breadcrumbs, the cooled onions and sage, then mix together well.

  4. Roll out your pastry on a surface dusted with flour to a thickness of 3cm, then cut into 2 long rectangles.

  5. Roll your sausage meat mix into two long sausage shapes and line the pastry rectangles.

  6. Paint the egg/milk mix on the edges and fold the pastry over the sausage filling.

  7. Push together the outside edge with your fingers or a fork to seal them shut.

  8. Cut into sausage roll lengths of your choice (depending whether you want mini or longer ones).

  9. Space out evenly on a baking tray and then brush the egg/milk mix on the outside of each.

  10. Pop in the oven for 25 minutes until golden brown and puffed up.

  11. Best served warm and fresh from the oven.

My 12yr old daughter tried to make these but kept asking questions as found the instructions a little confusing. She told us the instructions tell her to roll pastry 3cm thick but that was clearly too thick so we told her try 3mm NOT 3cm. She managed after that and we all enjoyed them.
