Homemade tortilla wraps

  • 175g plain flour

  • 1/2 tsp baking powder

  • 7 tbsp cold water

  • 1 tbsp olive oil

For the spicy chicken filling

  • 2 tsp chilli powder

  • 1 tsp paprika

  • ½ tsp onion powder

  • ¼ tsp garlic powder

  • ½ tsp cayenne pepper

  • ¼ tsp cumin

  • 1 tsp sugar

  • 1 tsp salt

  • 2 tbsp olive oil

  • 2 chicken breasts, sliced

  • 1 red pepper, deseeded and sliced

  • Lettuce

  • Cherry tomatoes, halved or quartered

  • 4 tbsp plain yoghurt

For the homemade wraps

  1. Mix all the wrap ingredients together and knead for 5 minutes

  2. Cover with a damp cloth and leave for 1/2 an hour

  3. Divide into 6 and roll out very thinly

  4. Cook for 1 minute each side on a hot frying pan. Put aside while you prepare the chicken.

For the spicy chicken

  1. Mix all the spices, sugar and salt together in a grinder or mini blender.

  2. Add the olive oil to a large non-stick frying pan over a medium-high heat. Add the spice blend and fry for 1 minute before adding the chicken strips and pepper strips.

  3. Stir to coat everything in the spice mix, and then cook for 8-10 minutes, or until the peppers are softened and the chicken is cooked through and golden.

Added extras

  1. Add a lettuce leaf, some cherry tomato pieces and a drizzle of yoghurt to each wrap. Add the chicken strips and peppers to the middle, roll up the wraps and serve.
