Chocolate cornflake cakes for cooking with kids

  • 100g chocolate (plain or milk)

  • 2 tbsp golden syrup (or runny honey)

  • 50g butter

  • 75g cornflakes

  1. Melt the chocolate, syrup and butter together in a pan on a low heat, or in the microwave

  2. Stir in the cornflakes

  3. Spoon into 12 cake cases in a bun tin - you can just use a plate if you don't have a tin

  4. Decorate with whatever sweets you want!

  5. Put in the fridge to set

Tips

Get the kids to help out by weighing and measuring the ingredients, breaking the chocolate into squares before melting, and spooning out the mixture once it's cooled enough. You can also let their imaginations run wild by trying some of the variations below. Any kind of sweets, chocolates or fruits are fair game for this versatile treat!

Remember though, cooking with kids can get messy! Make sure everyone's wearing old clothes, and keep a careful eye on little ones while you're dealing with the hot, melted chocolate.

How long do cornflake cakes take to set?

The finished cornflake cakes will take at least half an hour to set in the fridge. If you can't wait that long, you can always eat one or two while they're still melty - we promise we won't tell!

How to store your chocolate cornflake cakes

Once they're cooled, they'll keep in an airtight container for 2-3 days - if you can resist eating them for that long! These treats are perfect for bake sales and gifts; just add a pretty ribbon and you're good to go.

Top tips for melting the chocolate

The best way to melt the chocolate is by using a small saucepan, and a glass bowl that fits into the top of the saucepan, without touching the bottom. Heat a little water in the bottom of the saucepan until simmering, and pop the bowl on top, making sure that the bottom of the bowl doesn't touch the water. Then just pop the chocolate in the bowl and keep stirring until it's all melted.

If you're in a hurry though, you can do it in the microwave. Just pop the chocolate in a microwave-friendly bowl, heat for 20 seconds and stir. If there are still lumps, heat for a further 20 seconds and stir again - repeat until all lumps are gone.

Why are my cornflake cakes soft?

It usually takes at least half an hour for the cakes to set fully. If they’re still soft after this time, consider leaving them in the refrigerator for a bit longer.

If your cornflake cakes turn out soft even after giving them time to set, you might need to adjust the proportions of ingredients in your cornflake cakes recipe. Too much chocolate or too little cereal can result in a softer cake.

Finally, make sure that you store your cakes in an airtight container once they’ve set to keep them crisp! Leaving them exposed to a humid environment can quickly make them soggy.

Where do cornflake cakes come from?

We don’t really know when cornflake cakes were invented. One thing we do know for sure is that cornflakes themselves were invented in the late 19th century by John Harvey Kellogg (yes, of Kellogg’s fame!), so cornflake cakes can’t be much older than a century!

Once your chocolate cornflake cakes have cooled and set, they can be stored in an airtight container for 2-3 days. If you’re planning to gift them or bring them to an event, it's best to make them fresh on the day or the day before for the best flavour and texture.

Variations
